By oven-frying instead of deep frying your chicken, you will save a load of calories and fat. Try this out at your next picnic—kids will especially love it!
¼ cup skim milk
2 tbsp. melted butter or margarine
1 cup seasoned breadcrumbs
1/4 cup Parmesan cheese
1 tbsp. ground poultry seasoning
1 tsp garlic salt
1 tsp paprika
¼ tsp black pepper
5 lbs. chicken thighs, breasts and drumsticks
Nonstick cooking spray
Preheat the oven to 375 degrees. Spray two large baking pans with nonstick spray.
Crack eggs into a bowl and beat them. Add milk and butter, beat to combine.
In a separate bowl, mix bread crumbs, Parmesan, poultry seasoning, garlic salt, paprika and black pepper.
Dip one piece of chicken into the egg, then into the breadcrumb mixture. Make sure it’s coated, then shake lightly to let excess crumbs fall off. Put the chicken on a tray. Continue breading the chicken, piece by piece.
Put the trays in the oven and bake for 45 minutes to an hour, until chicken registers 165 on a meat thermometer and is not pink inside.
