Chickpea Salad Seasoned with Olive Oil

Chickpeas are a healthy source of protein, and make for a great vegetarian salad that's hearty and filling. A recent study shows that extra virgin olive oil may even help to reduce blood sugar spikes after meals, so enjoy without guilt!

You Will Need:

1/4 cup extra virgin olive oil
1/2 tsp ground Italian seasoning spice blend
1 1/2 cups of baby spinach leaves
1/2 cup fresh basil leaves
1 cup of cherry or grape tomatoes
1/2 cup of marinated artichoke hearts, drained
1 can of chick peas, drained
1/2 cup shredded part-skim mozzarella
Salt and pepper to taste

Instructions:

Mix the olive oil with the Italian spice blend in a container with a tight-fitting lid. Shake well and put it aside for several hours, or overnight.

Wash the spinach and basil leaves, then spin them dry with a salad spinner. Throw them in a bowl.

Add the tomatoes (halve them if desired), artichoke hearts and chick peas. Toss the ingredients.

Serve the salad and drizzle about 2 tsp. of seasoned olive oil on each bowl. Add salt and pepper to taste.
